Ingredients

  • 1/2 lb. fresh mushrooms
  • 2 Tbsp. butter
  • 1 Tbsp. oil
  • 1/2 c. Parmesan, Cheddar or Cheshire
  • 1 1/2 lb. fillet of sole or any white fish
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 Tbsp. green pepper, chopped
  • 6 Tbsp. white wine
  • 2 tsp. fresh lemon juice
  • 1 Tbsp. fresh parsley, chopped

Method

  • Melt butter in skillet over low heat.
  • Add mushrooms and saute over medium heat until tender.
  • Rub oil over shallow 4-quart baking dish and sprinkle with grated cheese.
  • Place fish on cheese.
  • Sprinkle fish with salt and pepper.
  • Add onions and top with mushrooms.
  • Pour wine over fillets.
  • Bake at 450° for 20 minutes or until fish flakes.
  • Sprinkle with lemon juice and parsley.
