Ingredients

  • VINAIGRETTE
  • 5 oz fresh figs (6 large), stemmed & quartered
  • 1/2 c water
  • 1 T fresh lemon juice
  • 1 T balsamic vinegar
  • 1 T white wine vinegar
  • 2 t chopped fresh basil
  • Generous pinch sugar
  • 2 T extra virgin olive oil
  • SALAD
  • 8 1/2-inch-thick rounds of goat cheese
  • 1 egg, beaten to blend
  • 1 cup panko
  • 1 T extra virgin olive oil
  • 10 C packed arugula
  • 3 oz thinly sliced prosciutto
  • 8 fresh figs, stemmed & halved
  • Honey

Method

  • For vinaigrette - combine figs and 1/2 water in medium saucepan. Can't find the rest of the recipe but I'm sure you can figure it out! :)
