Ingredients
- 2 pkg. frozen chopped spinach
- 1/2 stick butter or margarine
- 1/2 c. chopped onion
- 1/2 to 1 c. sour cream
- 1/2 c. Parmesan cheese
- 1 can artichoke hearts (not marinated), drained and cut up
- pepper to taste
Method
- Cook spinach.
- Saute onion in butter.
- Mix spinach, onion, artichoke hearts, sour cream and 1/4 cup of Parmesan cheese in a casserole dish.
- Add pepper and toss well.
- Put remaining 1/4 cup cheese on top.
- Bake, covered, at 325° for 30 minutes.
