- 1/2 cup butter
- 2 cups apples peeled, diced
- 1 cup sugar
- 1/2 cup walnuts chopped
- 2 large eggs
- 1/2 cup raisins, seedless
- 1 teaspoon baking soda
- 1 tablespoon butter melted
- 2 tablespoons buttermilk
- 1/4 cup brown sugar packed
- 2 cups flour, all-purpose
- 1/4 teaspoon cinnamon
- 1 teaspoon vanilla extract
Method
- Cream butter, slowly adding sugar, beat until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Dissolve baking soda in buttermilk, add to batter, mixing well.
- Stir in flour.
- Add vanilla and stir well.
- Stir in apples, walnuts and raisins.
- Spoon into 2 greased and floured loaf pans.
- Drizzle melted butter over loaves.
- Combine brown sugar and cinnamon, sprinkle over loaves.
- Bake at 350F (180C) for about 40 to 45 min.
- Cool in pan for 5 minutes and then cool completely on rack.
