Ingredients

  • 1/2 cup butter
  • 2 cups apples peeled, diced
  • 1 cup sugar
  • 1/2 cup walnuts chopped
  • 2 large eggs
  • 1/2 cup raisins, seedless
  • 1 teaspoon baking soda
  • 1 tablespoon butter melted
  • 2 tablespoons buttermilk
  • 1/4 cup brown sugar packed
  • 2 cups flour, all-purpose
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Method

  • Cream butter, slowly adding sugar, beat until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Dissolve baking soda in buttermilk, add to batter, mixing well.
  • Stir in flour.
  • Add vanilla and stir well.
  • Stir in apples, walnuts and raisins.
  • Spoon into 2 greased and floured loaf pans.
  • Drizzle melted butter over loaves.
  • Combine brown sugar and cinnamon, sprinkle over loaves.
  • Bake at 350F (180C) for about 40 to 45 min.
  • Cool in pan for 5 minutes and then cool completely on rack.
