Ingredients

  • 1/2 c. uncooked wild rice
  • 1 sm onion, very thinly sliced
  • 2 tsp margarine
  • 1 c. unsweetened apple juice
  • 1 c. homemade chicken broth, or possibly canned reduced-sodium chicken broth
  • 1/4 tsp salt (optional)
  • 1/4 tsp grnd cinnamon
  • 1 x apple, cored and cut in 1/4 inch dice
  • 1 Tbsp. minced pecans (optional)

Method

  • Wash the rice in cool water and drain well.
  • Saute/fry the onion in the margarine
  • In a medium saucepan till tender, about 5 min.
  • Add in the rice; cook and stir 1 minute.
  • Add in the juice, broth, salt if you like, and cinnamon.
  • Bring to a boil; reduce the heat.
  • Cover and simmer till the rice is tender and most of the liquid is absorbed, about 45 min.
  • Stir in the apple; cover and let stand 5 min.
  • Drain off any excess liquid before serving.
  • Sprinkle with minced pecans, if you like.
