Ingredients

  • 1 cans pineapple chunked
  • 1/2 pound polish kielbasa sausage
  • 1 x vegetable oil
  • 2 cloves garlic peeled and minced
  • 1 large yellow onion sliced
  • 2 cups carrots sliced
  • 2 tablespoons ginger root minced
  • 1 bunch broccoli florets cut in flowerets
  • 3/4 cup chicken broth
  • 3 tablespoons soy sauce, tamari
  • 2 tablespoons cornstarch

Method

  • Drain pineapple, reserving juice.
  • In wok or skillet, stir-fry sausage in 1 tablespoon oil for 1 minute.
  • Remove from wok.
  • Add oil as needed.
  • Stir-fry garlic, onion, carrots and ginger until onion is soft.
  • Add broccoli; stir-fry until tender and crisp.
  • Stir in pineapple.
  • Combine reserved pineapple juice with remaining ingredients.
  • Pour into wok.
  • Stir and cook until sauce boils and thickens.
  • Serve over rice.
