Ingredients

  • 3 lrg onions
  • 4 lrg carrots
  • 3 x potatoes
  • 1/4 x white cabbage
  • 1/4 c. oil
  • 1 head garlic
  • 1/2 tsp grnd ginger
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 4 c. water

Method

  • This recipe is common to the Ethiopian Jews (Phalashi).
  • My understanding is which these are NOT unique to them.
  • Peel all vegetables , cut into small cubes.
  • peel and mash the garlic.
  • Heat oil in a large pan and add in vegetables.
  • cover and saute/fry 2-3 min.
  • Add in the ginger, turmeric, pepper and salt and mix well.
  • Add in the water , stir and cook over very low flame for 30-40 min.
  • Serve warm.
  • Yield: 8 servings
