Ingredients

  • 3/4 c. margarine or butter
  • 2 eggs
  • pinch of salt
  • 3/4 c. almonds, sliced, slivered or chopped
  • 1 1/2 c. sugar
  • 1 1/2 c. sifted all-purpose flour
  • 2 tsp. almond flavoring
  • sugar to sprinkle on top

Method

  • Melt margarine and mix with sugar.
  • Add eggs, flour, salt and flavoring.
  • Mix well.
  • Pour batter into 9-inch iron skillet which has been lined with aluminum foil, shiny side up.
  • Cover top with almonds and sprinkle on sugar.
  • Bake 30 minutes in 350° oven.
  • May take longer in some ovens, cake should be light brown.
  • Remove cake from pan when it cools and peel off foil.
  • Do not remove foil while it is hot.
  • Wrap tightly to store.
  • Freezes well.
