Ingredients
- None None Dough
- 1 1/4 cups all purpose flour
- 7 tbsp cold butter, chopped
- 1/4 cup sugar
- 2 None large egg yolks
- None None Filling
- 9 tbsp butter, softened
- 1/3 cup sugar
- 2 None large eggs
- 1 tbsp all purpose flour
- 1 1/4 cups ground almonds
- 3 None medium pears, peeled, cored, quartered
- 2 tbsp apricot jam, strained
Method
- Preheat the oven to 350°F.
- To make the dough, mix the flour, butter, sugar and egg yolks in a food processor until combined. Transfer the mixture to lightly floured surface and knead into a smooth ball. Cover and refrigerate the dough for 30 mins.
- Meanwhile, make the filling. Beat the butter and sugar until combined, then beat in the eggs and flour until combined. Stir in the almonds.
- Roll the dough out on a floured work surface to line an 8 inch round loose-based flan pan. Spread the almond mixture into the crust and top with pears. Bake for about 35 mins. Brush with warmed, strained jam and serve.
