Ingredients
- 8 eggs
- 1 to 1 1/2 heaping Tbsp. mayonnaise (Kraft no-fat is good)
- 1 tsp. mustard
- 1 Tbsp. sweet salad (pickle) cubes
- 1 Tbsp. sweet pickle juice
- 1 tsp. or packet artificial sweetener (Equal)
- salt and pepper to taste
- paprika
Method
- Boil eggs approximately 20 minutes.
- Drain.
- Run cold water over eggs.
- Sprinkle salt in water and let stand a few minutes. (Eggs peel much easier.)
- Drain eggs again.
- Crack and peel eggs. Slice eggs, putting whites on egg dish and yolks in a bowl. Flatten egg yolks with fork.
- Mix all other ingredients with egg yolks except paprika.
- Sprinkle paprika on top.
- Makes 1 dozen full stuffed eggs.
- Discard extra egg whites.
