Ingredients

  • 3 lb. lean pork spareribs, cut into single ribs
  • 1/2 stick butter
  • 2 large onions, sliced and separated into rings
  • 2 garlic cloves, minced
  • juice of 2 lemons
  • 2 Tbsp. soy sauce
  • 4 tsp. curry powder
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 c. light brown sugar, firmly packed

Method

  • Place ribs in a large roaster; cover with water and bring to a boil over high heat.
  • Lower the heat, skim the foam, cover and simmer for 30 minutes.
  • Transfer ribs to paper towels to drain. Discard the water.
  • Preheat the oven to 300°.
