Ingredients
- 2 c. sifted, all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. light brown sugar
- 3/4 c. buttermilk
- 1/2 c. melted butter or margarine
- 3/4 c. mashed, cooked sweet potatoes
- 1/2 tsp. baking soda
Method
- Preheat oven to 400°.
- Sift together flour, baking powder and salt.
- Combine brown sugar, melted butter and sweet potatoes in small bowl. Beat until fluffy.
- Stir soda into buttermilk. Combine all ingredients.
- Stir only until moist. Turn out on floured board.
- Knead slightly.
- Roll out and cut into biscuits. Bake on ungreased baking sheet for about 20 minutes or until done. Makes about 18 biscuits.
