Ingredients

  • 2 c. sifted, all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 Tbsp. light brown sugar
  • 3/4 c. buttermilk
  • 1/2 c. melted butter or margarine
  • 3/4 c. mashed, cooked sweet potatoes
  • 1/2 tsp. baking soda

Method

  • Preheat oven to 400°.
  • Sift together flour, baking powder and salt.
  • Combine brown sugar, melted butter and sweet potatoes in small bowl. Beat until fluffy.
  • Stir soda into buttermilk. Combine all ingredients.
  • Stir only until moist. Turn out on floured board.
  • Knead slightly.
  • Roll out and cut into biscuits. Bake on ungreased baking sheet for about 20 minutes or until done. Makes about 18 biscuits.
