Ingredients
- 1 c. water
- 2 Tbsp. cornstarch
- 3 Tbsp. strawberry Jell-O
- 1 baked pie crust
- whipping cream
- 3/4 c. sugar
- 1 tsp. lemon juice
- 1 qt. strawberries
- softened cream cheese
Method
- Wash and cap strawberries.
- (You may slice the strawberries or leave them whole.)
- In a medium saucepan combine water, sugar and cornstarch.
- Bring to a boil and boil for about 1 minute.
- Add lemon juice and strawberry gelatin, stirring until dissolved. Cool.
- Carefully fold in strawberries.
- Spread softened cream cheese on cooled crust.
- Pour strawberry mixture into crust.
- Let set.
- Serve with whipped cream.
