Ingredients

  • 1 c. water
  • 2 Tbsp. cornstarch
  • 3 Tbsp. strawberry Jell-O
  • 1 baked pie crust
  • whipping cream
  • 3/4 c. sugar
  • 1 tsp. lemon juice
  • 1 qt. strawberries
  • softened cream cheese

Method

  • Wash and cap strawberries.
  • (You may slice the strawberries or leave them whole.)
  • In a medium saucepan combine water, sugar and cornstarch.
  • Bring to a boil and boil for about 1 minute.
  • Add lemon juice and strawberry gelatin, stirring until dissolved. Cool.
  • Carefully fold in strawberries.
  • Spread softened cream cheese on cooled crust.
  • Pour strawberry mixture into crust.
  • Let set.
  • Serve with whipped cream.
