Ingredients

  • 5 tbs evo
  • 16 oz bag baby spinach
  • 1 c crumbled feta
  • 3/4 c sour cream
  • 1 tsp minced garlic
  • 1/2 tsp grated lemon peel

Method

  • heat 1 tbs olive oil in skillet over med high heat add spinach and toss until wilted but still green...about 3 min. transfer to seive and press out extra liquid. chop spinach coarsley. combine 4 tbs oil, feta,sour cream, garlic & lemon in processor. pulse until smooth. transfer to bowl mix in spinach season with s & p
