Ingredients

  • 3/4 c. heavy cream
  • 1 1/4 c. brown sugar
  • 1/2 c. + 2 Tbsp. molasses
  • 4 1/2 c. flour
  • 2 tsp. ginger
  • 2 tsp. lemon rind
  • 1 tsp. baking soda

Method

  • Whip cream.
  • Add remaining ingredients except flour.
  • Stir 10 minutes.
  • Add flour and stir until smooth.
  • Cover and refrigerate overnight.
  • May be rolled 1/4-inch and cut into shapes.
  • Place on lightly greased cookie sheet.
  • Brush with water before baking in 300° oven.
  • Bake 8 to 12 minutes.
  • Leave on cookie sheet to cool. Decorate if desired.
