Ingredients

  • 1 Tbsp. oil or butter
  • 1 small onion, chopped
  • 1/2 c. celery, thinly sliced
  • 1 can stewed tomatoes
  • 1 can tomato sauce
  • 1/2 tsp. garlic powder
  • 1 lb. shrimp, peeled & deveined
  • 1 small green or red pepper, sliced thin
  • 1/2 tsp. dried thyme
  • 1 1/2 c. instant rice, uncooked
  • Creole seasoning to taste

Method

  • Place shrimp, onions, & peppers in sauce pan and saute until shrimp are pink. Add rest of ingredients (except rice) and bring to a boil. Stir in rice. Cover and remove from heat. Let stand 5-6 minutes. Fluff. Add parsley, if desired, and serve.
