Ingredients
- 1 Tbsp. oil or butter
- 1 small onion, chopped
- 1/2 c. celery, thinly sliced
- 1 can stewed tomatoes
- 1 can tomato sauce
- 1/2 tsp. garlic powder
- 1 lb. shrimp, peeled & deveined
- 1 small green or red pepper, sliced thin
- 1/2 tsp. dried thyme
- 1 1/2 c. instant rice, uncooked
- Creole seasoning to taste
Method
- Place shrimp, onions, & peppers in sauce pan and saute until shrimp are pink. Add rest of ingredients (except rice) and bring to a boil. Stir in rice. Cover and remove from heat. Let stand 5-6 minutes. Fluff. Add parsley, if desired, and serve.
