Ingredients
- 1 lb. unpeeled (medium-sized) fresh shrimp
- 1 (9 oz.) pkg. fresh tortellini with cheese filling (uncooked)
- 1/3 c. butter or margarine
- 1 shallot, minced
- 2 Tbsp. chopped fresh basil or 2 tsp. whole dried basil
- 1/2 c. grated Parmesan cheese
Method
- Peel and devein shrimp; set aside.
- Cook pasta according to package directions.
- Drain and set aside.
- Melt butter in a large skillet over medium-high heat; add shrimp, minced shallot and basil.
- Cook about 5 minutes, stirring constantly.
- Add pasta and cheese.
- Toss gently; add fresh basil as garnish, if desired. Serves 4.
