Ingredients

  • 1 lb. unpeeled (medium-sized) fresh shrimp
  • 1 (9 oz.) pkg. fresh tortellini with cheese filling (uncooked)
  • 1/3 c. butter or margarine
  • 1 shallot, minced
  • 2 Tbsp. chopped fresh basil or 2 tsp. whole dried basil
  • 1/2 c. grated Parmesan cheese

Method

  • Peel and devein shrimp; set aside.
  • Cook pasta according to package directions.
  • Drain and set aside.
  • Melt butter in a large skillet over medium-high heat; add shrimp, minced shallot and basil.
  • Cook about 5 minutes, stirring constantly.
  • Add pasta and cheese.
  • Toss gently; add fresh basil as garnish, if desired. Serves 4.
