Ingredients

  • 3 ounces (6 tablespoons) fresh pineapple juice
  • 2 ounces (4 tablespoons) amaretto liqueur
  • 1 ounce (2 tablespoons) white rum
  • 1 ounce (2 tablespoons) fresh lime juice
  • 1 ounce (2 tablespoons) cream of coconut
  • 3 dashes of angostura bitters
  • Crushed ice
  • Garnish: fresh pineapple wedge and a maraschino cherry

Method

  • Combine pineapple juice, amaretto liqueur, rum, lime juice, cream of coconut, and angostura bitters in an ice-filled cocktail shaker; shake vigorously until thoroughly chilled (about 30 seconds). Strain into a crushed ice-filled glass. Garnish, if desired.
