Ingredients
- 2 eggs
- 1 small onion
- 1 tsp. salt
- 2 tbsp flour
- 1/4 tsp baking powder
- 3 c. raw cubed potatoes
Method
- Put eggs in blender with onion, salt, flour, baking powder and 1/2 c. cubed potatoes. Cover, process at liquefy until smooth. Add remaining potatoes; cover and process two cycles at grind. Pour onto hot well greased griddle. Drain on absorbent paper. Yield 12 pancackes.
