Ingredients

  • 1/2 loaves French Bread, Cut Lengthwise
  • 2 Tablespoons Olive Oil
  • 1/2 cups Pesto (homemade Or Your Favorite Store Bought)
  • 8 slices Tomato
  • 1 dash Salt
  • 1 dash Pepper
  • 1/2 cups Parmesan Cheese, Shredded

Method

  • Cut the French bread in half lengthwise.
  • This recipe uses only half of the loaf at a time.
  • Brush the olive oil over the bread.
  • Place under the broiler for about 3 minutes to warm the oil and bread so that it soaks into the warm bread.
  • Spread the pesto evenly over the bread.
  • Place tomato slices evenly on the bread and salt and pepper the tomato slices only.
  • Place back under the broiler for 2 minutes more.
  • Take out and spread Parmesan cheese evenly.
  • Place back under the broiler until the cheese is melted and begins to brown slightly.
  • Serves 6 to 8 (depending on how big you cut them).
