Ingredients
- 2 pound veg of your choice
- 1/4 cup exra-virgin olive oil
- 2 large cloves garlic, minced
- 1 TBS chopped mixed herbs(chives, thyme; rosemary)
- 4 TBS chopped flat leaf parsley
- Salt and peppper to taste
Method
- Preheat oven to 400, place chopped vegetables in a large mixing bowl and toss with herbs and oil. Pour seasoned begetables into a rimmed baking sheet in a single layer and roast until browned, stirring halfway.
