Ingredients
- 4 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. shortening
- 1 tsp. vanilla extract
- 2 c. sugar
- 2 egg yolks
- 1 c. evaporated milk (Carnation)
- 1 Tbsp. lemon juice
- 2 egg whites
Method
- Sift first 3 ingredients; set aside.
- Cream shortening and extract together.
- Add sugar; beat until fluffy.
- Add egg yolks, beating thoroughly.
- Mixing until well blended after each addition, alternately add dry ingredients in fourths and a mixture of evaporated milk and lemon juice in thirds to the creamed mixture. Beat egg whites until stiff peaks are formed; fold into batter. Drop by tablespoon 3-inches apart onto a greased cookie sheet. Sprinkle with a mixture of sugar and cinnamon.
- Bake at 375° for about 10 minutes or until edges are lightly browned.
- Remove cookies to cooling rack.
- Makes around 5 dozen.
