Ingredients

  • 4 c. sifted flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. shortening
  • 1 tsp. vanilla extract
  • 2 c. sugar
  • 2 egg yolks
  • 1 c. evaporated milk (Carnation)
  • 1 Tbsp. lemon juice
  • 2 egg whites

Method

  • Sift first 3 ingredients; set aside.
  • Cream shortening and extract together.
  • Add sugar; beat until fluffy.
  • Add egg yolks, beating thoroughly.
  • Mixing until well blended after each addition, alternately add dry ingredients in fourths and a mixture of evaporated milk and lemon juice in thirds to the creamed mixture. Beat egg whites until stiff peaks are formed; fold into batter. Drop by tablespoon 3-inches apart onto a greased cookie sheet. Sprinkle with a mixture of sugar and cinnamon.
  • Bake at 375° for about 10 minutes or until edges are lightly browned.
  • Remove cookies to cooling rack.
  • Makes around 5 dozen.
