- 2 1/8 ounces achiote paste
- 2/3 cup bitter orange juice
- 2/3 pound boneless chicken breast
- 8 corn tortillas
- 7/8 cup refried beans black
- lettuce
- 1 1/4 cups red onion marinated
- 2 tomatoes sliced into half-moons
- 1 avocado sliced
- jalapeno chilies sliced
Method
- Dilute the achiote paste in bitter orange juice.
- Cover the chicken with this mixture and marinate for 1 hour.
- Sear the chicken. Shred.
- Fill the tortillas with the refried beans by lifting the thin layer of the tortilla.
- Add lettuce, chicken, onion, tomatoes, avocado, and jalapeno chilies.
- Serve immediately.
