Ingredients
- 1 pkg. lemon cake mix (no pudding)
- 1/2 c. margarine or butter
- 3 eggs
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. granulated sugar
- 1/2 tsp. vanilla
- 2 tsp. lemon juice
- confectioners sugar
Method
- Mix together cake mix, margarine and 1 egg in large bowl, using mixer until crumbly.
- Press onto bottom of greased 13 x 9-inch pan.
- Bake at 350° for 8 minutes.
- In medium bowl, beat cream cheese until smooth and fluffy.
- Mix in remaining 2 eggs, granulated sugar, vanilla and lemon juice until blended.
- Pour over crust.
- Bake 25 minutes until top edges are golden brown. Dust with confectioners sugar.
