Ingredients

  • 1 pkg. lemon cake mix (no pudding)
  • 1/2 c. margarine or butter
  • 3 eggs
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. granulated sugar
  • 1/2 tsp. vanilla
  • 2 tsp. lemon juice
  • confectioners sugar

Method

  • Mix together cake mix, margarine and 1 egg in large bowl, using mixer until crumbly.
  • Press onto bottom of greased 13 x 9-inch pan.
  • Bake at 350° for 8 minutes.
  • In medium bowl, beat cream cheese until smooth and fluffy.
  • Mix in remaining 2 eggs, granulated sugar, vanilla and lemon juice until blended.
  • Pour over crust.
  • Bake 25 minutes until top edges are golden brown. Dust with confectioners sugar.
