Ingredients

  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 2 cloves garlic, crushed
  • 1 tsp olive oil
  • 2 tbsp finely grated lemon peel
  • 1/4 cup lemon juice
  • 12 None lamb chops, french trimmed
  • None None FOR THE TOMATO AND CILANTRO SALSA
  • 2 small tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 1 clove garlic, crushed
  • 1 tbsp red wine vinegar
  • 1 tbsp finely chopped fresh cilantro

Method

  • Combine spices, garlic, oil, and lemon peel and juice in a shallow dish. Add lamb chops; rub mixture all over lamb. Let stand 10 mins.
  • Meanwhile, for the tomato and cilantro salsa, combine all ingredients in a medium bowl. Season to taste.
  • Heat an oiled grill pan on high heat or preheat the grill to medium-high. Cook lamb chops until browned on both sides and cooked to desired doneness.
  • Serve lamb chops topped with salsa.
