Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. sliced celery
  • 1 Tbsp. margarine
  • 1 1/2 c. water
  • 2/3 c. uncooked rice
  • 2 Tbsp. snipped parsley
  • 1 1/2 tsp. instant chicken bouillon
  • 1/2 tsp. curry powder
  • 1/8 tsp. allspice
  • 1/2 c. raisins
  • 1/4 c. chopped peanuts

Method

  • Saute onion and celery in melted margarine until tender.
  • Stir in water, uncooked rice, parsley, bouillon, curry powder, allspice, 1/4 teaspoon salt and 1/8 teaspoon pepper. Bring to boiling and reduce heat. Cover and simmer 15 minutes or until rice is tender and liquid is absorbed.
  • Stir in raisins and peanuts.
