Ingredients
- 1/2 c. chopped onion
- 1/4 c. sliced celery
- 1 Tbsp. margarine
- 1 1/2 c. water
- 2/3 c. uncooked rice
- 2 Tbsp. snipped parsley
- 1 1/2 tsp. instant chicken bouillon
- 1/2 tsp. curry powder
- 1/8 tsp. allspice
- 1/2 c. raisins
- 1/4 c. chopped peanuts
Method
- Saute onion and celery in melted margarine until tender.
- Stir in water, uncooked rice, parsley, bouillon, curry powder, allspice, 1/4 teaspoon salt and 1/8 teaspoon pepper. Bring to boiling and reduce heat. Cover and simmer 15 minutes or until rice is tender and liquid is absorbed.
- Stir in raisins and peanuts.
