Ingredients

  • 1 roll day old bread
  • 1/2 pound lean ground beef
  • 1 medium egg beaten
  • 2 tablespoons chopped parsley fresh
  • 1 onion peeled and finely chopped
  • 4 mini mozzarella balls halved
  • 4 olives stuffed
  • 1 tablespoon tomato ketchup
  • lettuce leaves to serve

Method

  • Soak the bread in a little cold water for 5 mins then squeeze out the excess water. Break up the soaked bread roll in a bowl and mix with the beef, egg, parsley and onion. Season with salt and freshly ground black pepper and mix well. Divide and shape into four large meatballs.
  • Heat the oil in a large non-stick pan and saute the meatballs over medium heat for 10-15 mins, turning occasionally until browned and cooked through. Remove and drain on paper towels.
  • Place the meatballs on a serving plate. Use the halved mini mozzarella balls and sliced olives to create eyes on each meatball. Pipe tomato ketchup to resemble mouths. Garnish with lettuce leaves.
