Ingredients

  • 2 gal. green tomatoes, sliced
  • 2 lg. onions, sliced
  • Salt
  • 1/4 pound mustard seed
  • 3 to 4 teaspoon of the following: Allspice, cloves, grnd mustard, and grnd ginger 2 tbsp. black pepper
  • 2 teaspoon celery seed
  • 1 3/4 c. brown sugar

Method

  • Place sliced tomatoes and onions in layers with salt between layers in a stainless steel kettle.
  • Let stand 24 hrs, then drain.
  • Add in rest of ingredients and cover with vinegar and boil for 2 hrs.
  • Strain through a sieve or possibly put in blender.
  • Bottle for use.
