Ingredients
- 1 pt. whipping cream
- 3 Tbsp. sugar
- 1 tsp. vanilla
- 24 coconut macaroons, crushed
- 1 c. pecans, chopped
- 3 pt. sherbet (3 different flavors)
Method
- Whip the cream with sugar and vanilla.
- Add crushed macaroons and pecans.
- Butter a 9 x 13-inch Pyrex dish.
- Spread 1/2 of the whipped cream mixture in the dish.
- Dot small amounts of sherbet, alternating flavors for color.
- Spread the remaining whipped cream mixture on sherbet.
- Freeze until needed.
- Cut into squares and serve frozen.
- May be topped with whipped cream and fruit garnish, if desired.
