Ingredients

  • 1 pt. whipping cream
  • 3 Tbsp. sugar
  • 1 tsp. vanilla
  • 24 coconut macaroons, crushed
  • 1 c. pecans, chopped
  • 3 pt. sherbet (3 different flavors)

Method

  • Whip the cream with sugar and vanilla.
  • Add crushed macaroons and pecans.
  • Butter a 9 x 13-inch Pyrex dish.
  • Spread 1/2 of the whipped cream mixture in the dish.
  • Dot small amounts of sherbet, alternating flavors for color.
  • Spread the remaining whipped cream mixture on sherbet.
  • Freeze until needed.
  • Cut into squares and serve frozen.
  • May be topped with whipped cream and fruit garnish, if desired.
