Ingredients
- 2 bundles fresh spinach
- 4 strips bacon
- 2 Tbsp. vinegar
- 2 Tbsp. water
- 1 Tbsp. sugar
- 3 sliced, hard-boiled eggs
- salt and freshly ground pepper to taste
Method
- Wash and thoroughly dry spinach.
- Fry bacon until crisp; drain on paper towel and crumble.
- Mix vinegar, sugar, water, salt and pepper into bacon fat and stir.
- Heat to boiling point.
- Add bacon.
- Pour over greens mixed with eggs.
- Toss lightly.
