Ingredients
- 1 medium eggplant
- Italian bread crumbs
- olive oil
- 1/2 c. Parmesan cheese
- 1/2 c. Mozzarella cheese
- Classico Pasta sauce (4 cheese or tomato basil)
- beaten egg + milk
Method
- Peel eggplant; slice about 1/2 inch thick.
- Dip in beaten egg and milk mixture and roll in bread crumbs.
- Place in hot oil and cook until all sides are golden brown.
