Ingredients

  • 1 1/4 lb. baking potatoes, thinly sliced and divided
  • 4 oz. Cheddar cheese, grated (about 1 c.), divided
  • 2 small onions, thinly sliced, divided
  • 2 Tbsp. butter or margarine, divided
  • 2 Tbsp. flour, divided
  • 1 tsp. salt, divided
  • 1/2 tsp. dried thyme, divided
  • 1/4 tsp. pepper, divided
  • 1 c. milk

Method

  • Preheat oven to 375°.
  • Butter a 2-quart baking dish.
  • Layer half the potatoes, 1/3 the cheese, half of the onions, 1 tablespoon butter, 1 tablespoon flour, 1/2 teaspoon salt and 1/8 teaspoon pepper;
  • repeat layering with 1/3 potatoes, 1/3 cheese and remaining onions, butter, flour, salt, thyme and pepper. Place remaining potatoes on top.
  • Pour milk over.
  • Sprinkle with remaining cheese.
  • Cover and bake 45 minutes.
  • Uncover and bake until potatoes are tender and liquid is almost absorbed, 20 minutes.
  • Heat broiler.
  • Broil until golden, 1 to 2 minutes. (Bake 1 hour and 7 minutes; ready to serve in 1 hour and 22 minutes.)
