- 1 cup ounces tomato juice
- 2 cups beef broth
- 1 1/2 cups chopped red or green pepper
- 3/4 cup chopped onion
- 1 chopped English cucumber
- 1/3 cup lemon juice
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 1 clove garlic, minced or pressed
- 1/2 cup chopped parsley
- 1 teaspoon salt
- 1/8 teaspoon pepper
Method
- In large bowl, combine all ingredients. If desired, puree. Cover and chill for at least 30 minutes, preferably a few hours.
