Ingredients

  • 6 large or 8 medium green peppers
  • 1 lb. ground lean beef
  • 1/3 c. minced onion
  • 1/2 c. chopped celery
  • 1 c. instant rice
  • 1/2 c. milk
  • 1 (10 oz.) can tomato soup
  • 1 soup can water
  • 1 egg
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. chili powder

Method

  • Cut tops off of peppers.
  • Remove stems and set tops aside to use later.
  • Clean out peppers.
  • Brown ground beef and remove grease.
  • Add onion, celery, rice, milk, egg, salt, pepper and chili powder to ground meat and mix well.
  • Stuff peppers with mixture.
  • In pot, combine tomato soup and water.
  • Place pepper tops in bottom of pot and set stuffed peppers on top of them to prevent peppers from spilling.
  • Cover and simmer on high for 2 hours.
  • Spoon sauce over peppers when serving.
