- 6 loin pork chops (1/2 inch thick)
- 2 Tbsp. butter or margarine
- 1/4 c. flour
- salt to taste
- 1 c. celery, cut 1/2 inch
- 1 c. cut green pepper
- 1 c. sliced onion
- 1 clove garlic, crushed
- 1 tsp. thyme
- 1/4 tsp. pepper
- 1/4 tsp. sugar
- dash of hot sauce
- 1 lb. can tomatoes, drained
- 4 c. cooked rice
Method
- Wipe pork chops with a damp paper towel.
- Trim excess fat. In a large skillet, heat butter.
- Mix flour and salt.
- Coat pork chops on both sides; brown.
- Remove from skillet.
- Add garlic, onion, green pepper, celery, thyme, sugar and hot sauce.
- Saute for 5 minutes.
- Add tomatoes.
- Bring to boiling and return the chops to the skillet.
- Spoon sauce over chops and simmer, covered, 40 to 50 minutes until tender.
- Serve with rice.
- Makes 6 servings.
