Ingredients

  • 6 loin pork chops (1/2 inch thick)
  • 2 Tbsp. butter or margarine
  • 1/4 c. flour
  • salt to taste
  • 1 c. celery, cut 1/2 inch
  • 1 c. cut green pepper
  • 1 c. sliced onion
  • 1 clove garlic, crushed
  • 1 tsp. thyme
  • 1/4 tsp. pepper
  • 1/4 tsp. sugar
  • dash of hot sauce
  • 1 lb. can tomatoes, drained
  • 4 c. cooked rice

Method

  • Wipe pork chops with a damp paper towel.
  • Trim excess fat. In a large skillet, heat butter.
  • Mix flour and salt.
  • Coat pork chops on both sides; brown.
  • Remove from skillet.
  • Add garlic, onion, green pepper, celery, thyme, sugar and hot sauce.
  • Saute for 5 minutes.
  • Add tomatoes.
  • Bring to boiling and return the chops to the skillet.
  • Spoon sauce over chops and simmer, covered, 40 to 50 minutes until tender.
  • Serve with rice.
  • Makes 6 servings.
