Ingredients
- 3 Tbsp. olive oil
- 1 small onion, diced
- 1 tsp. chopped garlic
- salt and pepper to taste
- 6 center cut pork chops or chicken cutlets
- 8 oz. heavy cream
- 1 c. chicken stock
- 2 oz. tomato paste
- 1 Tbsp. basil
Method
- Saute onion and garlic in olive oil. Add the chicken stock, basil, salt and pepper; simmer. Add the pork chops and cook until done. Add the cream and tomato paste; heat through. Serve over rice or pasta.
