Ingredients

  • 10 ounces, weight Crab Meat - Real (steamed) Or Imitation, Chopped
  • 1 cup Celery, Diced
  • 1/2 cups Red Bell Pepper, Diced
  • 3 Tablespoons Sweet Onion, Minced
  • 1/4 cups Olive Oil Mayonnaise
  • 1 Tablespoon Rice Vinegar
  • 13 teaspoons Ground Pepper
  • 1/4 teaspoons Salt
  • 1/2 teaspoons Garlic, Minced
  • 2 Tablespoons Minced Cilantro
  • 1 Tablespoon Lime Juice
  • 4 whole Whole Wheat, Fiber Enriched Tortillas
  • 4 leaves Lettuce, Bite Size Pieces

Method

  • In a large bowl, combine chopped crab meat, celery, bell pepper and onion.
  • In a small bowl, whisk together olive oil mayo, rice vinegar, pepper, salt, garlic, cilantro and lime juice.
  • Pour over the crab mixture.
  • Cover and let sit in the fridge until chilled, or up to 2 hours.
  • When chilled, top each of the tortillas with lettuce, spooning crab mixture over the top.
  • Wrap and devour.
