Ingredients

  • 3 cups milk
  • 3 cups water
  • 1 onion, chopped
  • 1 lb new potato, cubed
  • 1 tablespoon fish bouillon cube
  • 10 ounces frozen corn
  • 1 lb cod fish fillet, boned and cut in 1 inch chunks

Method

  • Bring milk and water to simmer in a large pot.
  • Add onion, potatoes, and bouillon.
  • Simmer 12 minutes or until potatoes are tender.
  • If you like a thicker chowder, remove a cup of the potatoes and puree in a blender or vegetable mill, then stir back into chowder.
  • Add corn.
  • Return to simmer.
  • Add cod; simmer 3 minutes or until fish is opaque.
  • Taste and season with fresh ground pepper as desired.
