Ingredients

  • 1/3 c. reduced calorie oleo
  • 1/2 c. morsels of wheat bran cereal
  • 1/2 c. firmly packed brown sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 3/4 c. flour
  • 1/2 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/3 c. shredded unsweetened coconut

Method

  • Melt oleo in medium saucepan over medium heat.
  • Add cereal. Cook 2 minutes, stir constantly.
  • Remove from heat; add brown sugar, vanilla and egg, stirring well.
  • Set aside cereal mixture. Combine flour and next 3 ingredients; add to cereal, stirring well. Spread into 8-inch square pan, coated with vegetable cooking spray. Bake at 350° for 15 minutes.
  • Let cool and cut into 2-inch square bars.
  • Store in covered container in fridge.
  • Yields 16 bars.
