Ingredients

  • 4 eggs, beaten
  • 2 (4 oz.) cans chopped green chilies
  • 8 oz. Monterey Jack cheese, grated
  • 8 oz. medium Cheddar cheese, grated
  • 1 (12 oz.) can evaporated milk
  • 2 Tbsp. flour
  • 1/2 tsp. salt

Method

  • In a large bowl, beat the eggs, then add green chilies, Monterey and Cheddar cheeses, evaporated milk, flour and salt. Stir.
  • Pour into a greased 11 x 7 x 2-inch glass casserole dish. Bake in preheated 350° oven for 35 minutes or until knife comes out clean.
  • Makes 8 to 10 servings.
