Ingredients

  • 6 boneless skinless chicken breast halves
  • 1/2 c. finely chopped onion
  • 1 (14 oz.) can plum tomatoes
  • 1/2 c. whipping cream
  • 1/2 c. fresh julienned basil leaves
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Method

  • Preheat oven to 450°.
  • Saute onion in butter in medium skillet for 5 minutes.
  • Turn heat to high.
  • Add tomatoes and juice.
  • Cook until reduced (4 minutes).
  • Add cream.
  • Bring to boil; cook 3 minutes.
  • Stir in basil, salt and pepper.
  • Place chicken breasts into shallow baking pan.
  • Pour cream sauce over chicken.
  • Bake at 450° for 20 minutes.
  • Serves 4 to 6.
