Ingredients
- 6 boneless skinless chicken breast halves
- 1/2 c. finely chopped onion
- 1 (14 oz.) can plum tomatoes
- 1/2 c. whipping cream
- 1/2 c. fresh julienned basil leaves
- 1/2 tsp. salt
- 1/2 tsp. pepper
Method
- Preheat oven to 450°.
- Saute onion in butter in medium skillet for 5 minutes.
- Turn heat to high.
- Add tomatoes and juice.
- Cook until reduced (4 minutes).
- Add cream.
- Bring to boil; cook 3 minutes.
- Stir in basil, salt and pepper.
- Place chicken breasts into shallow baking pan.
- Pour cream sauce over chicken.
- Bake at 450° for 20 minutes.
- Serves 4 to 6.
