Ingredients

  • 3 c. assorted melons, cut in 1 1/2-inch chunks
  • 1/4 lb. each: ham, turkey, deli roast beef
  • 1/4 lb. Swiss, Jack or Cheddar cheese
  • 4 scallions
  • 1/4 c. mint leaves
  • 1 c. blueberries
  • 1 small head romaine lettuce (I use assorted greens)
  • 2 Tbsp. Balsamic vinegar
  • 1/3 c. vegetable oil
  • 1/4 tsp. salt or to taste
  • 1/8 tsp. black pepper
  • mint sprigs for garnish

Method

  • Remove seeds and rind from melon.
  • Cut in 1 1/2-inch chunks. Cut meat and cheese into pieces about 2-inches long and 1/4-inch wide.
  • Thinly slice scallions, including most of green tops.
  • Chop mint.
