- 3 c. assorted melons, cut in 1 1/2-inch chunks
- 1/4 lb. each: ham, turkey, deli roast beef
- 1/4 lb. Swiss, Jack or Cheddar cheese
- 4 scallions
- 1/4 c. mint leaves
- 1 c. blueberries
- 1 small head romaine lettuce (I use assorted greens)
- 2 Tbsp. Balsamic vinegar
- 1/3 c. vegetable oil
- 1/4 tsp. salt or to taste
- 1/8 tsp. black pepper
- mint sprigs for garnish
Method
- Remove seeds and rind from melon.
- Cut in 1 1/2-inch chunks. Cut meat and cheese into pieces about 2-inches long and 1/4-inch wide.
- Thinly slice scallions, including most of green tops.
- Chop mint.
