Ingredients
- 2 1/2 or 3 lb. boneless skinless chicken breasts
- 1 (10 oz.) jar apricot preserves
- 1/4 c. soy sauce
- 1/4 c. sherry
- 1/4 c. finely chopped onions
- 2 Tbsp. cornstarch
Method
- Place chicken in 12 x 8 inch baking dish.
- Combine remaining ingredients; pour over chicken.
- Bake at 325° for 1 hour, turning occasionally.
- Serve with fluffy rice and tossed greens.
- Very simple.
