Ingredients

  • 1 cup butter or 1 cup margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 12 teaspoon vanilla extract
  • 2 12 cups all-purpose flour
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 10 ounces hershey's butterscotch chips
  • 1 14 cups chopped dried apricots

Method

  • Heat oven to 350F
  • Beat butter and sugar in large bowl until well blended.
  • Add eggs and vanilla; beat well.
  • Stir together flour, baking soda and salt; gradually add to butter mixture, beating until well blended.
  • Stir in butterscotch chips and apricots.
  • Drop by teaspoons onto ungreased cookie sheet.
  • Bake 8 to 10 minutes or until lightly browned around edges.
  • Cool slightly; remove from cookie sheet to wire rack.
  • Cool completely.
