Ingredients

  • 1/2 c. Rice - raw
  • 1/2 lb Butter
  • 1/3 c. Flour
  • 1 quart Lowfat milk
  • 3 x Large eggs
  • 2 lb Spinach,cooked and minced
  • 1/4 c. Green onions, minced
  • 1 1/2 c. Feta cheese, crumbled
  • 1/4 c. Parmesan cheese
  • 1 Tbsp. Paprika Salt to taste Pepper to taste White pepper to taste

Method

  • Cook rice according to directions, set aside.
  • Heat the butter.
  • Add in flour and stir till thoroughly mixed.
  • Cook about two min, then allow to cold slightly.
  • Add in mix to simmering lowfat milk a small amount at a time.
  • Whip to break up all the lumps then whip in the Large eggs till creamy and smooth.
  • Let simmer about 10 to 15 min.
  • Place spinach in bottom of 9 x 13 casserole dish.
  • Add in rice, feta, cheese and green onions spreading equally over spinach.
  • Salt and pepper to taste.
  • Pour cream sauce over top.
  • Sprinkle with parmesan cheese and paprika.
  • Bake at 350 degrees for 20-25 min.
