Ingredients
- 4 qt. cucumbers, sliced
- 2 green peppers, sliced
- 1/3 c. salt
- 6 medium onions, sliced
- 3 cloves garlic, crushed
- 5 c. sugar
- 1 1/2 tsp. turmeric
- 1 1/2 tsp. celery seed
- 3 c. cider vinegar
- 1 tsp. pickling spice
- 2 tsp. mustard seed
- 1/4 tsp. alum
Method
- Mix the first 5 ingredients together and soak 3 hours in 1-quart water with 2 trays of ice, stirring occasionally.
- Mix remaining ingredients together as a pickling syrup.
- Drain vegetables.
- Combine with syrup in stainless steel or enameled kettle and heat, just to boiling.
- Seal in hot jars.
- Makes approximately 8 pints.
