Ingredients

  • 4 qt. cucumbers, sliced
  • 2 green peppers, sliced
  • 1/3 c. salt
  • 6 medium onions, sliced
  • 3 cloves garlic, crushed
  • 5 c. sugar
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. celery seed
  • 3 c. cider vinegar
  • 1 tsp. pickling spice
  • 2 tsp. mustard seed
  • 1/4 tsp. alum

Method

  • Mix the first 5 ingredients together and soak 3 hours in 1-quart water with 2 trays of ice, stirring occasionally.
  • Mix remaining ingredients together as a pickling syrup.
  • Drain vegetables.
  • Combine with syrup in stainless steel or enameled kettle and heat, just to boiling.
  • Seal in hot jars.
  • Makes approximately 8 pints.
