Ingredients

  • 2 4-rib lamb racks
  • tablespoon vegetable oil
  • 2-3 large potatoes
  • 1 onion
  • 2 carrots
  • optional: diced tomatoes in their juice
  • salt
  • pepper
  • EITHER (a)oregano or mint in 1 c. water
  • OR (b) garlic in 1 c. orange juice

Method

  • Ahead of time, cut potatoes, onions, and any other vegetables desires into small pieces.
  • In a large pot, saute lamb chops briefly in oil. (Or separately in a frying pan, then change to big pot for baking.) Add salt, pepper, and either spices (a) or (b).
  • Put cut-up vegetables around & on the chops. Cover tightly and bake at 350 F for 40 minutes. Check to see the vegetables are done -- potatoes and carrots usually take the longest.
