- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. plain yogurt
- 1 tsp. baking soda
- 1 egg
- 1/2 c. vegetable oil
- 1/2 c. sugar
- 1 tsp. vanilla extract
- 1 c. blueberries
Method
- Preheat oven to 350°.
- Grease 12 muffin tins.
- Sift together the flour, baking powder and salt.
- In a separate bowl, combine yogurt with baking soda.
- Set aside.
- Beat egg in a third bowl, then add the oil, sugar and vanilla.
- Stir to combine.
- Add flour mixture and yogurt mixture alternately to egg mixture.
- Gently fold in berries.
- Pour into muffin tins.
- Bake for 25 to 30 minutes, or until lightly browned on top.
- Cool for 5 minutes, then remove from tins and cool on rack.
