Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. plain yogurt
  • 1 tsp. baking soda
  • 1 egg
  • 1/2 c. vegetable oil
  • 1/2 c. sugar
  • 1 tsp. vanilla extract
  • 1 c. blueberries

Method

  • Preheat oven to 350°.
  • Grease 12 muffin tins.
  • Sift together the flour, baking powder and salt.
  • In a separate bowl, combine yogurt with baking soda.
  • Set aside.
  • Beat egg in a third bowl, then add the oil, sugar and vanilla.
  • Stir to combine.
  • Add flour mixture and yogurt mixture alternately to egg mixture.
  • Gently fold in berries.
  • Pour into muffin tins.
  • Bake for 25 to 30 minutes, or until lightly browned on top.
  • Cool for 5 minutes, then remove from tins and cool on rack.
