Ingredients
- 1/2 c. margarine
- 1 c. sugar
- 2 eggs, beaten
- 2 c. all-purpose flour
- 1 tsp. soda
- pinch of salt
- 1 3/4 c. mashed bananas
- 1 c. nuts, chopped
- 1 tsp. vanilla
Method
- Cream margarine and sugar until light and fluffy.
- Add eggs and bananas, mixing well.
- Combine dry ingredients; stir into banana mixture, just until all ingredients are moistened.
- Stir in pecans and vanilla.
- Spoon batter into a greased 9 x 5 x 3-inch loaf pan.
- Bake at 250° for 1 1/2 hours or until bread tests done.
