Ingredients

  • 1/2 c. margarine
  • 1 c. sugar
  • 2 eggs, beaten
  • 2 c. all-purpose flour
  • 1 tsp. soda
  • pinch of salt
  • 1 3/4 c. mashed bananas
  • 1 c. nuts, chopped
  • 1 tsp. vanilla

Method

  • Cream margarine and sugar until light and fluffy.
  • Add eggs and bananas, mixing well.
  • Combine dry ingredients; stir into banana mixture, just until all ingredients are moistened.
  • Stir in pecans and vanilla.
  • Spoon batter into a greased 9 x 5 x 3-inch loaf pan.
  • Bake at 250° for 1 1/2 hours or until bread tests done.
