Ingredients

  • 2 tbsp butter
  • 1 medium yellow onion chopped very well
  • 1 can of diced tomatoes with green chiles(14.5 oz)
  • 1 cup corn(canned or frozen)
  • 4 oz cream cheese
  • 2 1/2 cup chicken stock
  • 1 1/2 cup half and half
  • 1 tsp ground cumin
  • 1 1/2 tsp garlic powder
  • 1 salt and pepper to taste
  • 3 slices of bacon cooked to crispiness and diced into small pieces
  • 2 1/2 cup chicken that had been cooked and diced
  • 1 cup shredded sharp cheddar cheese
  • 1 tortilla chips to break into soup

Method

  • Melt butter and sautee onion for 5-7 minutes in a large soup/stock pot.
  • Add next 8 ingredients and simmer over low-medium heat until cream cheese is thoroughly melted.
  • Add chicken, bacon and cheese to pot and continue to simmer another 5 minutes.
  • Serve with crushed tortilla chips.
